Mastered a Vegan Muffin!


I've done it! I've got down a vegan recipe for my banana muffin! It's really healthful because there are only 'basic' ingredients - whole wheat flour, oats, mashed bananas, applesauce, shaved coconut, and pumpkin seeds for texture. It's so good especially when just baked and crumbled over some Greek yogurt!

oooh--this post instantly caught my eye, because i was hoping to use up some frozen bananas i had. this muffin sounds like it's right up my alley, with all the whole grain goodness. looks delicious!
